Who was Pasteur?
Louis Pasteur began as a chemist, discovering the handedness of tartaric-acid crystals. He then proved that fermentation and spoilage are the work of living microbes, and that gentle heating — pasteurisation — can kill them. His elegant swan-necked flasks demolished the old doctrine of spontaneous generation. Turning to disease, he showed that weakened germs could protect against later infection: he vaccinated sheep against anthrax in a dramatic public trial, and in 1885 gave his untested rabies vaccine to Joseph Meister, a boy bitten by a rabid dog — who lived. A fierce, patriotic experimenter who prized controlled proof and public demonstration, Pasteur founded the institute that bears his name and became one of the most consequential scientists in history.

That switch between two ways of releasing energy from the same glucose is exactly what this lesson describes, and he found it decades before anyone could explain it.
